Date Paste - Sugar Substitute
Great sub for sugar in this SCD world.
One thing about SCD is that the only sugar you can have is fruit and honey which makes baking a little harder. Unlike date syrup, this recipe keeps the fiber from the whole date in tact so it’s SCD legal and can be used as a one for one sugar substitute in recipes. It also can be watered down a bit to act as maple syrup or a sub for honey when you bake! Plus you can just trow chunks into cookies for a mock cookie dough like I did in this skillet cookie recipe. Ingredients
8 oz Pitted Dates
1/4 Cup Almond Milk (or water)
Pinch of Sea Salt
Recipe
Toss room temperature dates into a food processor with almond milk and salt. Puree for about 30 seconds to a minute. If it’s not becoming a paste easily, add in 1 more tablespoon at a time and puree until you get the paste like consistency.
Store in fridge for 2-3 weeks or freeze for future use.
