Cinnamon Date-doodles

Missing cookies hard since I started the scd diet. I don’t have a huge sweet tooth but I really do love a really good, gooey cookie. I found that paleo and scd cookie recipes just weren’t getting me to the sweetness and the texture that I so desire. and demand from my cookies. So I was playing around with recipes and loved the way these came out. They are mega gooey on the inside but still hold their shape. The dates provide some fiber which helps slow down the absorption of sugar so you don’t get huge spikes. Please make and have two, or three, every night as I have. You deserve it.
Ingredients
2 Cups Almond Flour
1/3 Cup Date Paste (or 1/2 cup pitted dates, packed)*
1 Egg
3 Tbsp Ghee (or Grass-Fed Butter)
1 1/2 Tbsp Cinnamon, divided
1/2 Tbsp Vanilla Extract
1 Tbsp Honey
1/2 tsp Salt
1/2 tsp Baking Soda
*If using whole dates, soak them in warm water for 5 minutes then throw them into a food processor and pulse for a few seconds.
Recipe
Preheat oven to 350 degrees.
Place 1 Tbsp of cinnamon into a small bowl. Set Aside.
In a large bowl, combine melted ghee, vanilla extract, honey, date paste, and egg. Mix with an electric hand mixer or whisk until smooth.
Add in almond flour, 1/2 tbsp cinnamon, salt, and baking soda. Mix ingredients until a dough has formed.
Scoop out 1 tbsp of dough at a time and roll into a ball with hands. Drop into cinnamon bowl and roll around until the outside is coated then transfer to baking sheet.
Once tray is full, take the under side of a jar, cup, or mug and smash balls down into desired cookie thickness.
Bake for 8-10 minutes. Check at 8 minutes and if they’re a bit too gooey, keep in for 2 more minutes. I got 20 cookies from this batch..
Let cool for 5 minutes, Store in fridge. Eat often.
