Strawberry Peach Cobbler - GF & SCD

Like an entire Summer crammed into my mouth.

Lord help me, this was gone too fast. I made a few different things with peaches and thought they were giving me some trouble in the tum (stone fruit can be hard on people with digestive issues). I was hoping, wishing, and praying it wasn’t my dear sweet peach causing me discomfort. Luckily, I tried them again in this dish and everything went fine! Such a temperamental stomach we have! I removed the skins from these which might have helped with the digestion (for me) so don’t write off a fruit or vegetable if you’re having trouble with it. Try cooking and/or removing skins before eating and see if that helps. Cooking food makes it easier for our digestive system to break it down so it might just be as simple as that! Grab your end of Summer peaches and whip this up stat.

Ingredients

Filling:
3 Yellow Peaches, Peeled and Sliced
1 Cup Strawberries, Sliced
1 Tbsp Honey
1 Tbsp Lemon Juice
1/4 tsp Sea Salt

Cobbler Topping:
1 Cup Almond Flour
1/4 Cup Coconut Flour
1 Egg
3 Tbsp Honey
1/2 tsp Vanilla Extract
1/2 tsp Baking Soda
1/4 tsp Sea Salt

Recipe

Preheat oven to 350 degrees.

Peel and thinly slice peaches and place in a large bowl. Remove stems and slice strawberries and place in bowl with peaches. Stir gently to combine.

Add honey, lemon juice, and salt to peach mixture and gently stir until fruit is evenly coated. Set aside.

In a separate large bowl, whisk together egg, honey, vanilla, and salt until smooth. Add in almond flour, coconut flour, and baking soda and stir until fully combined.

In a round baking dish pour in peach mixture and flatten until evenly spread. If there is a ton of liquid, you can pour some out but I like to leave the juices in cause it adds to the sweetness!

Take dough and roll into a ball then cut into desired topping size (I divided into 4 but you can do more/smaller). Flatten each piece of dough and place on top of peach mixture.

Place in the oven for 30-35 minutes until the top starts to brown. Take out and serve immediately with ice cream for a good time.
