Apple Gouda Galette

As if I needed another reason to galette something.

Made this a while back when apple season was just getting started. I used to love apple picking with my family when I was a kid. Then making all things apple for the next few months was a delight! Baked apples always give me that warm cozy feeling of childhood and what better way to get through the holidays while also in the middle of a pandemic?! Comfort food all day and all night! You can use any kind of cheese you want for this! I used a goat milk gouda because I’m staying away from cow milk dairy (and used goat butter!) but regular gouda works, cheddar would work, whatever you want/have on hand. I just like anything with cheese so here we are!

Ingredients

Dough:
1 1/2 Cup Almond Flour
1/4 Cup Coconut Flour
8 Tbsp Grass-fed Unsalted Butter (1 Stick)
2 Tbsp Honey
1/2 tsp Baking Soda
1/2 tsp Salt
2-3 Tbsp Ice Water
1 Egg Yolk, for egg wash

Filling:
2 Honey Crisp Apples, Sliced
4 oz Gouda (I used goat milk gouda)
2 Tbsp Honey
1/2 Lemon, Juiced
1/2 Tbsp Thyme
1 tsp Cinnamon
1/2 tsp Ginger Spice
Pinch of salt

Recipe

Preheat oven to 350.

Dough:
In a large bowl, combine all wet ingredients except ice water and egg. Mix with a standing or hand mixer. The butter should be cold so you’ll get butter chunks instead of smooth mixture to create a flakey crust. Add in dry ingredients and mix until you get a dough like consistency. Add in 1 tbsp ice water at a time until you have a workable dough. Form into a ball and place in the freezer for 30 minutes to an hour.

Filling:
While dough is freezing, thinly slice apples and place into a large bowl. In a small bowl, combine. honey, lemon, cinnamon, ginger, and salt. Stir until smooth. Pour over apples and carefully mix until apples are fully coated.

Next, grate gouda into a bowl and set mix in thyme. Set aside.

Assemble:
Take the dough out of the freezer and place on parchment paper. Place another piece of parchment paper on top of dough and use a rolling pin to flatten into a large circle.

Take top parchment paper off. Sprinkle grated gouda and thyme in the middle of the dough (remember you’re gong to fold dough over so make an inner circle). Place sliced apples in a circular fashion layering them at you go starting from the outside.

Fold over outside dough to form a crust. In a small bowl, whisk egg yolk and brush on top of the folded dough. Sprinkle a little more gouda on top, optional. Transfer parchment paper with galette onto a large baking sheet.

Bake for 30-35 min on lower oven rack until crust is golden brown. Slice and serve!
